Low Fat Pudding

homemade low fat chocolate puddingThis easy low fat pudding recipe uses tofu as it’s main ingredient and has over 16 grams of protein in one serving. It can be easily tweaked to your favorite flavor with a little experimentations and imagination. Even better there is no cooking involved. All you need is a blender. It doesn’t take long to whip up a batch, so why not give it a try?

Ingredients

  • 2 boxes of tofu (any consistency)
  • 2 cups almond milk
  • 4 teaspoons vanilla
  • 5 tablespoons maple syrup
  • 2 teaspoons almond extract
  • 4 -6 tablespoons molasses to taste
  • 4-6 tablespoons hazelnut (or whatever your favorite flavor is) non dairy soy coffee creamer (optional)
  • 1/2 cup coco powder (optional if you want chocolate pudding only,)

Directions

Chop up the tofu into small peices with a knife and put the peices into the blender. Blend on low for about thirty seconds. Mix in the almond milk until you reach the desired consistency. Use more or less depending on how thick you prefer your pudding just remember to leave room for the other liquid ingredients. Next mix in the vanilla extract, (even if you are making chocolate pudding). The molasses, maple syrup and almond extract will add sweetness so do not add the whole thing at once or you may end up with a pudding that is too sweet for your tastes. Once you are finished blending all the ingredients pour the pudding into containers and put them in the refrigerator to chill. Makes 4-6 servings.
